 Tomato Pulao 

2 cups rice, plain or Basmati, washed and drained

3-4 tablespoons  oil

1 medium onion, chopped finely 

1 stick Cinnamon

4 Cloves

2 Cardamom

1-2 green chilies, sliced

3 tablespoons Mint Leaves, chopped

3 medium Tomatoes diced

1 Cup Tomato Juice

1 Cup Hot water

Salt to taste   or  1 1/2 teaspoons 

Heat the oil, sauté cardamom, cinnamon & cloves until you can smell the flavor. 

Add the onion and sauté until light brown.

Add the mint leaves, chilies, and tomatoes. Add the rice. Sauté the mixture lightly for a few minutes. Add salt.

Add 1 cup hot water and 1 cup of  tomato juice. Bring the mixture to a boil. Lower the heat and cook for 10 minutes or until the rice is cooked.

Garnish with Mint leaves. Serve it hot.
