Kheera Ka Raita

Cucumber in spiced yogurt

Raita is a  yogurt-salad made with cooked or raw  vegetables like cucumbers, carrots, onions, beets etc. in yogurt and flavored with herbs and spices.  It usually accompanies a meal and is served chilled. This is one goes well with a main rice dish like a pilaf or "biryani".

  • 2 large Cucumbers, peeled and finely grated
  • 1 cup Yogurt, plain
  • 1 Green chili, finely chopped (use according to the desired hotness)
  • 2 teaspoons Fresh Coriander/Cilantro leaves, finely chopped
  • 4 teaspoons Sugar
  • 3/4th teaspoon Salt
  • A sprig of Cilantro for garnishing

1. Skin the cucumbers and grate either finely or coarsely.

2. Remove the excess juice from the cucumbers by straining through a vegetable strainer or use your hands as a strainer.

3. Mix the green chili, chopped cilantro leaves, sugar and salt into the yogurt.

4. Now add the cucumber and mix well.

5. Garnish with fresh a sprig of cilantro leaves. Serve chilled.

Makes 2 cups. Servings : 6

Quick tip: Fat free yogurt can be used too. Substitute an artificial sweetener for sugar, if needed.
